Planning for peak periods?

How do you plan for peak periods? Do you hire extra staff, longer waits, nothing? How you find the right balance between servicing the customer and being overstaffed after the peak period?

We try to avoid hiring any additional staff or contract workers because of our concern for the quality of work. We had to do it one time and it was did not work the way we were hoping. We try to manage our work load and for the most part we do a fairly good job with it if we have peak periods we usually just spend more hours on the job.

In our consulting practice we do not plan for peak periods because we cant plan for peak periods. There are slow periods in our business i.e. around the holidays and summer. But most of the time you cannot predict the peak periods

All of our business is done online so we just have to make sure we have the capacity during normal business hours
