But you do both, you remove everything *and* go to the whole c**p again.
So either quote as is considered polite, or ignore the posting(s). If
you consider them just c**p, why reply?

Does that matter? One meaning of unprofessional is:

"Not conforming to the standards of a profession: unprofessional
behavior."

Moreover, you at first tried to state that my sig didn't conform the
netiquette (by quoting a web page on which the author made some stuff up
and called it netiquette). I am aware that netiquette is not a standard,
but how many standards of a profession are official standards? (E.g. ISO
approved for example).

So since you first tried to prove that my sig was not according to the
netiquette (which comes close enough to a standard in Usenet
communications), failed, and next called it unprofessional, I think that
sums it up to unethical.
