If you design the adsense to make your site look cheap then it will look cheap. The outcome or how your site will look like does not depend whether you have adsense ads or other ads on your site. You'll be the one who'll have to work to make it a "selling" site instead of cheap.

Sometimes when I visit a website I see Adsense ads that are totally ... unrelated ads can make a website look really horrible -

For me a website that is full of adsense is quite unpleasing to the eyes and uninteresting, I hate landing in websites that has no contents but adsense and that's what makes a website look cheap and horrible!
Websites are supposed to have high quality design and contents and ads should be related to the website's content - besides your website is the main point of your marketing, not the ads.

You should choose best design, which will make your Adsense good looking and always try to choose default add a channel or put related sites' list inside add channel list, so you can see related ads on your website.

In my opinion try to ignore adsense in your website, else if you want it then try to make it senseable which looks good in your website.
