Try to minimize the amount of product that you offer, offering more product introduces more complexity into the business
If you have bunch of products to offer, you have to set your focus on the products on your top sales. i am not saying that forget about the others, of course all products are offered but give more attention to what is in demand.
I would have to agree with both. Keeping your overhead low is so important in order to maintain. In a restaurant business that means keeping your menu small and manageable. The bigger the menu, the more you stock and the cooks you employ.
